Maple Balsamic Brussels Sprout with Red Onions


Who doesn't love food on sticks? With kids around, this is the perfect recipe to win their heart! It takes about 20 minutes to prepare and can be served with rice.  The beauty about Brussels Sprouts is that they are known to be rich in protein, fibre, and are good antioxidants; reduce your risk of obesity, diabetes, cancer and  heart disease. Did you know that taking three-quarters of a cup of Brussels Sprouts meets your daily Vitamin K requirement?


Ingredients: 1 lb brussels sprouts, halved 1/2 red onion, sliced into 1-inch squares 3 Tbsp extra virgin olive oil 3 Tbsp balsamic vinegar 1 Tbsp maple syrup 1 Tbsp dijon mustard 1/4 tsp sea salt

Toppings: Drizzle of maple syrup Squeeze of lemon juice Chopped fresh parsley
